Ambassade d’Auvergne
Potatoes, whipped with Tomme d’Auvergne cheese, to produce a creamy, silken, elastic delight, presented to the table in a copper pot.
This is aligot, their speciality.
This charming restaurant, serves traditional, authentic food from the Mid Pyrenees region.
Leaving Rue du Grenier Saint-Lazare in the 3rd arrondissement, and stepping over the threshold, into the dining room of Ambassade d’Auvergne, offers a slight sense of being transported back in time.
Soft and comfortable red velvet chairs.
Dark timber furnishings, highlighted by white stucco walls. Blue and white ceramics, imbedded into the bar’s facade.
Legs of ham, dangling from the ceiling, wine barrels acting as occasional tables, absinthe served in wonderful glass fountains and charming, suited waiters, attending to your every need.
Ambassade d’Auvergne is refined yet a remarkably relaxed, old fashioned, charming restaurant.
Aligot is a traditional dish made from mashed potatoes, garlic and Tomme d’Auvergne cheese. Generally it is served with duck or sausages.
The fanfare that surrounds the presentation of the aligot is part of the fun and what Ambassade d’Auvergne is known for.
The maitre’d brings to the table, the aligot in a copper pot and offers it for inspection. Then, comes the fun part, he whips the potato with a ladle and then pulls the ladle up high, as far as his arm can stretch, with it, the cheesy, elastic potato follows.
After the presentation, the dish is plated and brought back to the table. The food is hearty, wonderful and great value.
The decor is eclectic, rustic and slightly old fashioned in a cosy, almost kitch kind of way and adds to and is part of, it’s charm.
